Apple Crumble Cookies- Recipe
Ingredients and method Cookies: 125g butter 120g Caster Sugar 60g Light Brown Sugar 1 Beaten egg 2tsp Vanilla extract 200g Plain flour Gluten free 1 tsp Baking powder 1/2 tsp Xanthum gum (Only if using Gluten Free flour, omit if using normal plain flour ) 2 tsp Cinnamon powder 1/2 tsp Nutmeg 1/2 tsp All spice 1/4 tsp Clove Add butter to saucepan and over low to medium heat allow to melt and become golden brown. Make sure your stir consistently Foaming will appear and continue to stir until brown and amber colour. Take off heat and allow to cool down. Then whisk the cooled brown butter, along with brown sugar and caster sugar until combined Add the beaten egg and vanilla extract until combined Sift all the spices, baking powder and flour and slowly fold into the batter Now with the cookie dough, make 60g round balls. You will have a small amount left over also make this into a smaller ball as this will be used as a crumble Chill the balls into the fridge/ freezer for 1 h
