Apple Crumble Cookies- Recipe
Ingredients and method
Cookies:
125g butter
120g Caster Sugar
60g Light Brown Sugar
1 Beaten egg
2tsp Vanilla extract
200g Plain flour Gluten free
1 tsp Baking powder
1/2 tsp Xanthum gum (Only if using Gluten Free flour, omit if using normal plain flour )
2 tsp Cinnamon powder
1/2 tsp Nutmeg
1/2 tsp All spice
1/4 tsp Clove
- Add butter to saucepan and over low to medium heat allow to melt and become golden brown. Make sure your stir consistently Foaming will appear and continue to stir until brown and amber colour. Take off heat and allow to cool down.
- Then whisk the cooled brown butter, along with brown sugar and caster sugar until combined
- Add the beaten egg and vanilla extract until combined
- Sift all the spices, baking powder and flour and slowly fold into the batter
- Now with the cookie dough, make 60g round balls. You will have a small amount left over also make this into a smaller ball as this will be used as a crumble
- Chill the balls into the fridge/ freezer for 1 hour longer if in fridge
- Bake at gas mark 4 for 20 to 22 minutes
- Once out and leave to cool for a short while but not long, then make an indent with the back of a spoon as this is were the apple pie filling will go
Apple Pie Filling
2 large apple pies- Peel and chop into small pieces
40g Salted butter
50g Brown Sugar
2 Tsp cinnamon
1/4 Tsp nutmeg
2 Tb spn lemon juice
1/2 Tsp cornflour
3 Tsp cold water
- Simmer apples, butter, spices, brown sugar and lemon juice in a pan on medium heat until the apples have softened
- Make a slurry of cornflour and the water
- Add the slurry to the apple mix and keep stirring until it becomes thickened.
- Once the cookies have cooled add the filling in the indent
- Then drizzle with caramel
- With the small left over cookie, crumble and add to the top of each cookie.
